Drop Biscuits

Your basic buttermilk biscuit.

Ingredients

  • 2 c (10 oz) all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp sugar
  • 3/4 tsp salt
  • 1 c cold buttermilk
  • 8 Tbsp + 2 Tsbp unsalted butter, melted and cooled for 5 minutes

Procedure

Oven @ 475 F, center rack

  1. Line a rimmed sheet with parchment.
  2. In mixing bowl: whisk flour, baking powder, baking soda, sugar, and salt together.
  3. In another mixing bowl: combine buttermilk and 8 Tbsp butter, stir until clumpy.
  4. Add butter mix to dry ingredients. Stir with rubber spatula until just incorporated and batter pulls away from the sides of the bowl.
  5. Using a greased 1/4 c measure, scoop out level amount of batter and drop onto sheet (approx. 2.25 in diameter, 1.25 in height). Scoop all the batter.
  6. Bake 12-14 minutes.
  7. Brush tops with 2 Tbsp melted butter. Let cool 5 min on wire rack.
