A basic spice cake. I like adding chunks of candied ginger to zhuzh it up.

Ingredients
- 2/3 c neutral oil
- 2 c flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/2 tsp ginger
- 1/2 tsp nutmeg
- 1/2 c chopped candied ginger
- 3 eggs
- 1 c packed light brown sugar
- 1 c white sugar
- 1 c canned pumpkin
- 1/3 c buttermilk
- 2 tsp vanilla extract
- cream cheese frosting
Procedure
Oven @ 350 F
- Grease and flour two 9-inch or three 8-inch cake pans.
- In a medium bowl: whisk flour, bakin soda, baking powder, salt, spices.
- In a separate bowl: mix oil, eggs, sugars, pumpkin, buttermilk, vanilla. Beat until smooth. Fold the flour mix in until just combined, no large lumps. Mix in the candied ginger.
- Pour batter into pans. Bake until toothpick comes out clean (~ 30-40 minutes).
- Cool 10 minutes, turn out onto rack to cool more.
- Frost with cream cheese frosting.
