Pumpkin Spice Cake

A basic spice cake. I like adding chunks of candied ginger to zhuzh it up.

Ingredients

  • 2/3 c neutral oil
  • 2 c flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 tsp nutmeg
  • 1/2 c chopped candied ginger
  • 3 eggs
  • 1 c packed light brown sugar
  • 1 c white sugar
  • 1 c canned pumpkin
  • 1/3 c buttermilk
  • 2 tsp vanilla extract
  • cream cheese frosting

Procedure

Oven @ 350 F

  1. Grease and flour two 9-inch or three 8-inch cake pans.
  2. In a medium bowl: whisk flour, bakin soda, baking powder, salt, spices.
  3. In a separate bowl: mix oil, eggs, sugars, pumpkin, buttermilk, vanilla. Beat until smooth. Fold the flour mix in until just combined, no large lumps. Mix in the candied ginger.
  4. Pour batter into pans. Bake until toothpick comes out clean (~ 30-40 minutes).
  5. Cool 10 minutes, turn out onto rack to cool more.
  6. Frost with cream cheese frosting.
